The coffee earned the highest rating in a cupping of coffees from roasters in the northwestern U.S. for Coffee Review’s April 2020 tasting report. Produced by smallholding farmers from trees of the rare indigenous Ethiopia Wush Wush variety of Arabica. Processed by fermenting the fresh coffee fruit in an oxygen-free environment before drying it in the whole fruit. Revel Coffee is a micro-roaster located in Billings, Montana. “A difference you can revel in” Revel coffee had its beginings with a fifteen year old putting unroasted coffee in an oven. After a kitchen full of smoke, an unimpressed mother told him to take it outside. Things have progressed from the oven to popcorn poppers to air roasters to a small commercial drum roaster … various methods with years of trial and error experience that cannot be bought. Revel coffee is different … really different. There are two ways to look at how things are done differently here: extra steps taken to have better tasting coffee, and things that are not done to preserve the quality. Each list is substantially long. From sourcing and purchasing quality specialty grade coffee that is truly exceptional, to roasting said coffee properly where the origin character and full flavor potential of the coffee is brought forth, to extreme freshness standards, to meticulous brewing techiniques, and to super long run on sentences.
